Homemade Acai Bowls

One thing we love to do on Monday mornings is head over to our favorite little place and grab and Acai bowl, then we go jog our favorite trail. We got introduced to Acai bowls about 4 years ago and we have never looked back. They are so tasty and are packed full of vitamins, minerals, and antioxidants, which we all know are good for our hair, skin, and body!

We also love to make our own. The recipe is easy and so very quick! For the base you can make your own Acai mixture, but “ain’t no body got time for that”. I  bought the puree mix pre-made from Costco. Frozen_Pack_Orig_Web_Res

For toppings, all you need to do is load up on your favorite fruits add some coconut shavings, your favorite granola and top it off with organic raw honey. I am in love with the Organic pumpkin flax granola so I use that, but here is our favorite homemade granola recipe.

5 cups oats (quick or regular)

1 cup powdered milk

1 tsp. salt

1 tsp. cinnamon

1 cup coconut

1 cup chopped nuts (any kind)

¼ cup raisins

1 cup honey

½ cup coconut or olive oil

1 tsp. vanilla

In a large bowl stir all dry ingredients together. Add honey, oil, vanilla and stir. Put on un-greased cookie sheet and bake @300 degrees for 30 minutes. Let cool on cookie sheet.

Voila! I like to put strawberries, banana’s and blueberries on mine. :)

Try discovering a new and healthy recipe this week. God made fruits and vegetables so bright and colorful for a reason. They are gorgeous and eating fruits and veggies can be a huge part of healing. Eating healthy brings peace and joy and assists in the process of overcoming depression and anxiety.
