I never understood why my Mom said it was too hot to cook in the summer until I became a Mom myself.
Blame it on the laziness of summer, or the weather, but I have lost the desire to cook meals that take longer than
10 minutes to cook. So I will be sharing with you some quick, easy, and healthy summer meals that the
whole family will enjoy. I cannot take credit for this recipe. It is brought to you by the “Cooking Light” magazine.
Creamy Blueberry Chicken Salad
1/2 cup thin vertically sliced red onion
1/3 cup diced celery
1/4 cup fresh torn basil
12 ounces shredded skinless, boneless chicken (about 3 cups)
1/2 teaspoon salt
1/2 cup greek yogurt
2 1/2 Tbs fresh lemon juice
1 Tbs honey
2 cups fresh blueberries
1 (5 ounce) package fresh arugula
2 tsp extra virgin olive oil
1/4 tsp freshly ground black pepper
Combine yogurt, honey, and lemon juice in a small bowl and whisk.
Combine all other ingredients in a large bowl.
Toss together and top with greek yogurt dressing.
Summer is a good time to teach your kids about the benefits of eating the fruits and veggies that are in season. Use
these seasonal fruits and veggies in your cooking as much as possible. Your kids will be more interested in eating
those healthier meals if they were involved in making them with you. If possible, take some trips to the farmers market,
or to the grocery store, and let your kids pick out the fresh ingredients. Get the whole family involved in a healthier eating lifestyle this summer.
