Mini stuffed peppers

   

      

At around 3:00 pm everyday I get really tired and hungry! I am always on the look out for quick and easy snacks that are healthy and that will give me a boost of energy. Mini peppers have always been a favorite snack of mine, but lately I have been wanting to add a little extra to an already tasty snack.

 

These are super easy and take me about 5 minutes to whip together.

1 can of organic chicken

celery 

mushrooms

Jalapeño greek yogurt

drain the chicken, cut the veggies add them in, mix in a bit of greek yogurt, then stuff your peppers to the brim.

Simple for anyone on the go and tasty!
